The one I really remember is the 2003 Tour, but I didn't like the result!

I guess 2003 as it was the centenary year and the first time I ever went to see it - Prologue and finish in Paris!

1. 2005 Giro
2. 2000 Giro
3. 2006 Giro (a tour de force - but would be boring every year)

was 2000 giro with pantani in the snow? or was that 98? i enjoyed that one.
2005 giro - was the one where leadership changed hands loads right?
I also liked Garzelli vs. Casagrande a couple years earlier.
Regarding TDF... 2006 race was "interesting" but for some of the wrong reasons in the final week. Same goes for 2007.
This topic really got me thinking, I've relished/respected the recent L-B-L's and Flanders more than i have enjoyed/remembered the GT's since the Armstrong era began.

Been thinking, but it depends how far back we are allowed to go.
Last 10 years....
Giros: 1998 (Tonkov v Pantani) 2000 and 2005
Tours 2003 and 2006 (for its fuelling extremes)
Vueltas 2001 and 2003
